One of my favorite tofu recipes that’s bursting with flavor! The perfect 30 minute lunch recipe for those of you trying to add more plant based recipes into your week!
Rice cooker (optional)
1 block of pressed extra firm
1/4 cup low sugar teriyaki sauce ( or regular)
Avocado oil spray
1 avocado, thinly sliced
6 Rice paper wraps
1 cup cooked sushi rice (I cook mine in the rice cooker, to make this easier if you don’t have one I’d recommend microwaveable Jasmine or sticky rice)
Coconut aminos or soy sauce for dipping
1. Slice your tofu into thin squares, then add it to a bowl along with teriyaki sauce, place in the fridge to marinate for 30 min.
2. While tofu marinades cook your rice.
3. Spray a pan with a generous amount of avocado oil spray and place over medium high heat. Add your tofu and cook for 3-4 minutes on each side or until lightly browned and crispy on the edges.
4. Assemble rolls by dipping rice paper in room temperature water for a few seconds on all sides until they turn pliable but not too soft add a little bit of water to a flat surface and place rice paper on top. Add a spoonful of rice, a piece of tofu, and avocado. Fold by bringing up the bottom-half over the center then the sides, then roll.
5. Heat the same pan you used to cook the tofu over medium high and again spray with a generous amount of avocado oil spray. Pan fry the rolls for 3 minutes on each side.
6. Enjoy with desired dipping sauce!
