Air Fryer Chicken Sausage & Veggies

Equipment//

Air fryer 

Glass mixing bowls

Cutting board

Measuring cups & spoons

Baking sheet (if using oven method)

Ingredients//

1 large yellow or orange bell pepper, sliced

1 summer squash, halved + diced

1 zucchini, halved + diced

4 carrots, diced into 1/2 inch pieces

olive oil cooking spray 

1 tbsp coconut aminos 

salt + pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp italian herbs 

1 package of sweet Italian chicken sausage

For serving: brown or white rice, coconut aminos, parsley, balsamic glaze 

Instructions//

1. Cut veggies and add them to a large mixing bowl. Spray with cooking spray then add coconut aminos and remaining seasonings, mix.

2. Chop chicken sausage then add to veggies, mix to combine.

3. Spray air fryer basket with cooking spray and set to 390 F. Add veggies and sausage to the basket (you may have to do 2 batches depending on size of air fryer) and cook for 20 minutes, tossing halfway through. 

4. While that cooks, prep your rice, I use frozen microwaveable rice on busy nights or a rice cooker when I have more time. 

5. Add rice to a bowl and top with chicken sausage and veggies, a drizzle of coconut aminos, optional parsley and balsamic glaze.

If you don’t have an air fryer//

Preheat oven to 450 F and line a large baking sheet with parchment paper. Add chicken sausage and veggies baking sheet and roast for 25-30 minutes, or until chicken is starting to crisp and veggies are tender.

Notes//

Feel free to use any of your favorite veggies or a different type of sausage. My favorite part about this recipe is that it’s extremely customizable!
