BBQ Chicken Salad

Equipment//

Air fryer

Measuring cups & spoons

Glass mixing bowls

Cutting board

For the Chicken//

1 ½ lbs chicken breast tenderloins

½ tsp garlic powder

½ tsp onion powder

½ tsp parika

½ tsp salt

1 cup sugar free BBQ sauce (or any BBQ sauce)

Olive oil spray

For the salad//

4 cups romaine lettuce, chopped

1/4 cup sprouts

1 European cucumber, diced

1/4 cup cherry tomatoes, halved

1/4 a red onion, thinly sliced

For the dressing//

3 tbsp nonfat plain Greek yogurt

1 tsp lemon juice

1/2 tsp garlic powder

1/4 tsp onion powder

1/2 tsp dried dill

1 tsp honey

1 tbsp warm water to thin

Instructions//

1. Stir together garlic powder, onion, powder, paprika, and salt in a medium sized bowl. Set aside.

2. Pat chicken dry and spray with cooking spray. Coat each side in spice rub.

3. Spray air fryer with nonstick cooking spray and add chicken in an even layer (may have to do two batches). Air fry at 400 F for 5-6 minutes on each side, or until chicken is cooked through.

4. Dip chicken in BBQ then return back to air fryer and cook for another 1-2 minutes to heat the sauce. Allow chicken to rest for 5 minutes before chopping into bite sized pieces

5. While the chicken cooks, prep salad ingredients and add them to a large bowl.

6. Whisk together salad dressing ingredients (adding more water if too thick) and pour desired amount over salad. Toss until well combined. 

7. Add desired amount of salad to a bowl and top with chicken. 

Notes//

This is a great option for meal prep. If choosing to do so, add salad to a tupperware and top with chicken once it is fully cooled and add salad dressing to a small tupperware.
