Gluten Free Brownies

Ingredients//

1 cup almond flour

1/2 cup unsweetened cocoa powder

1/2 tsp salt

1 cup coconut sugar (or regular sugar of choice)

2 eggs

1/2 cup coconut oil, melted and cooled

2 tsp vanilla extract 

1 bar of 70% dark chocolate cut into small chunks

Optional dark chocolate chips for topping

Directions//

1. Preheat the oven to 350 F and line an 8×8 square baking pan with parchment paper.

2. To a medium bowl add almond flour, cocoa powder, and salt. Mix together.

3. In a separate large bowl whisk together coconut sugar, eggs, coconut oil, and vanilla until smooth.

4. Slowly fold dry ingredients into wet until well combined. Then fold in chocolate.

5. Transfer batter to baking pan and sprinkle with chocolate chips. 

6. Bake for 20 minutes then remove from the oven and let cool for an hour before slicing into 9 squares. Store leftovers in an airtight container for up to 4 days.
